Carrot Cake

This is Mom’s favorite recipe for carrot cake.

2 cups sugar

2 cups flour

2 t. baking soda

2 t. cinnamon

1 t. salt

Mix in:

3 cups grated carrots

4 eggs

Beat then slowly add:

1 1/2 cups oil

Pour into greased pan. Bake at 325º for 35-45 minutes or until center is done. Let cool

Cream Cheese Frosting

3 8oz. pkgs. cream cheese

1 stick of butter softened

2 cups sifted powdered sugar

Cream together cream cheese and butter until creamy. Gradually stir in the powdered sugar.
